BATAVIA/Crapshoot Kitchen & Commissary has their first tenant, Linda Borinquena brings a little Caribbean food to 56 Harvester

The Commissary Kitchen at 56 Harvester has its first tenant.

Linda Borinquena officially opened yesterday and sold out of food a few hours after lunch. Today, day two, they sold out about 5:00p.m.

“It started a little slow the first hour, then at 12 o’clock it just took off,” says Vianiliz Echevarria Rivera, Co-owner. Rivera and her mom Elizabeth, Co-owner, and brother Adnan are bringing Caribbean flavors to town.

“It’s not spicy, its full of flavor, and love, we add the love.”

The family was looking to open up their takeout business in Brockport but could not find a place.

“Through Downtown Batavia Business Improvement District, I spoke to Tammy who linked me up with Rob Credi. Rob has been my mentor in every step of the way. He is a huge angel to my mom and my brother.”

Credi came up with the idea of a Commissary Kitchen after he heard that food trucks were having trouble finding a health department approved kitchen to create their food which is required. “It’s built so anyone that wants to start up can do so without the huge investment. We’ve taken all that huge investment off their hands by providing all the equipment, the permits and insurances to make this a certified space. Hopefully, they will be a big hit and they can look forward to moving into their own space, says Credi, owner/operator of Crapshoot Kitchen and Commissary.

The flat fee for unlimited access is $600 a month. Hourly rate is $24 per hour. The business has to supply its own insurance and workers compensation. They are responsible for payroll and their sales tax.

The space can handle 4-5 operations at once with available storage for each of the operators.

Credi will be opening his own food venture this Friday, October 6th. Xavmen American Style Ramen.

“It’s something that came up on a whim at home, my wife and I making dinner, we came across one recipe and it was so good. It’s something different for Batavia, what I’m doing is not traditional ramen, everything is very Americanized.”
