WYOMING COUNTY/A love of baking is behind the opening of Ralph’s Cafe and Bakery in Attica

Ralph’s has a place to sit down and a playroom for children.

The Wyoming County Chamber & Tourism office held a ribbon cutting for Ralph’s Café and Bakery at 16 Market Street in Attica, NY on Friday afternoon.

Ralph’s Café and Bakery is owned and operated by Laura Anders. Anders moved to Attica about 13 years ago and fell in love with the small village and its character. The shop is named after her best friend of 15 years, Ralph, a pug dog.

“It’s nice, it feels safe for kids, and everyone knows everyone, I feel comfortable here,” says Anders.

Anders says baking and creating have been her passion since she was a small child.

“I’ve always liked to bake; I have memories of being very small trying to help my mom bake pies. When I got to high school, I made my very first scratch made cake, I was just hooked from there. I soaked up all the knowledge I could from any source I could find, whether it was cookbooks, watching the food network, PBS, Julia Childs or watching my mom and grandma to figure out what it’s all about.”

Ralph’s Cafe and Bakery have been open since August 1st. Already, customers have their favorites. Anders says she can’t keep cheesecakes or pumpkin pies in stock. They fly off the shelves almost as soon as they are made.

Ralph’s Cafe and Bakery offers both individual portions and multi-packs of muffins, cupcakes, pies, cakes, ice cream, breads, as well as ready-made sandwiches and wraps to grab-and-go. They have a variety of soups and sides in the frozen case and one variety of hot soup that rotates each week. There are beverages available in the refrigerated case, along with hot coffee and tea. Anders says she uses scratch made bread in her sandwiches and wraps are made with fresh tortilla. Custom orders are also available.

“My favorite thing right now is copycat recipes. I’ll look into how I can recreate them at home and then I tweak them. I take old standbys like my white cake recipe and experiment to see how I can make maple cake or a strawberry cake.”

When not working at creating new baked goods, Anders is a mom to five children, ages 4-14. She also homeschools her children. Her oldest just started going to public school this year. Ander’s mom, Jill, also helps out in the morning from 7-9 with the breakfast crowd. Debbie, Ander’s sister in-law, also has been helping out taking orders.

“This is my time to meet who my neighbors are, everyone has been so nice and friendly. It’s just been fun and interesting; people respond with tips and ideas.”

Ralph’s Café and Bakery is open Thursday-Sunday, 7:00am-8:00pm, orders can be made in person, grab and go, or online. Custom orders can be made by calling 585-356-6992 to make a request.
